a little taste of Madeira for dinner!

If you've read my previous post, you'll know how much I adored our recent break in Madeira.

Inspired by one of our delicious meals, I came home and created my own recipe so that we could have a taste of the Med all year!
You'll need:
Cherry tomatoes
a courgette
potatoes (I used baby ones)
Aldi cook from frozen cod fillets
Olive oil
Mixed herbs
Garlic

First, finely dice your potatoes, so they're roughly 1.5cm squares. Pop them in to a jug and drizzle a glug of olive oil over, with some pepper and mixed herbs. Give the jug a shake so that the potatoes are evenly coated.

Then spread them out on a baking tray and put to one side.

To prepare the fish, I popped it in to a tin foil parcel with some freshly squeezed garlic, mixed herbs, pepper and a drizzle of olive oil. Roll the parcel up, beginning with the sides so that you have a nice easy to open bit on top. Pop both the fish and the potatoes in to the oven.

Then, prepare your courgette by slicing it finely.The courgette and tomatoes will only need around 5 minutes on a low heat for them to soften and char slightly, so once they're prepared you can step away, but don't forget the timer on the oven!

With 5 minutes to go until the fish is ready, pop the sliced courgette and cherry tom's in to a frying pan. We use a ceramic non-stick pan so I don't add any oil to this. Leave them for a minute or two and then turn them so that both sides are equal. I just give the pan a little shake so that the tomatoes are evenly browned and softened.

When everything's ready, place the sliced courgette around the sides of the plate with the cherry tomatoes placed on top. Make a pile of the diced potatoes and then place the fish on top.



A nice drizzle of olive oil over the top will just finish this off nicely, YUM.
